When it gets to that time of the year when I go out to one of my favorite grocery stores (Sprouts) and come home with this type of stash, you can rest assured that I am entering into my summer eating pattern. 😊
As much as I love my winter foods (rutabagas, sweet potatoes, squashes, etc.), by this time of the year I am literally craving colorful raw vegetables. Typically, I would have lettuces too, but with the current ‘ban’ on some lettuces I decided to have lettuce-less salad this week. Look at how beautiful and colorful this food is. It’s going to be a wonderful eating week.
I haven’t researched what I am about to say here but I think eating some portion of colorful raw vegetables everyday helps to alleviate or lessen many of the physical problems that plague Americans particularly, i.e. constipation, poor immune system, other digestive issues, allergies, mineral deficiencies, blood pressure issues, cholesterol issues, etc. […again, I’m no doctor or medical professional, so this is strictly my opinion].
I even bought fresh mangos today… I can’t remember the last time I did that; possibly! I never have. 🤔 I’ve had mangos before but never bought fresh ones myself. They were 3 for .$99 today at Sprouts. Those little beauties came right home with me… yes, they did. 😌
I gained 2-3 pounds over the winter months.😞 Hopefully my summer foods will help to melt those couple of extra pounds away. I am not too worried though because I started a new exercise program and I am slightly more muscular than I’ve been in a long time. In my last post you saw that I was diagnosed with Silent Reflux and prescribed 40 mg of Prilosec (brand name) to take. I took it for one day! That day was the first day I had actual burn with heartburn😐…. so I called the doctor’s office and they said to get the over the counter version which is 20mg. 🤨. I had a better idea to try…. like figure out why I was having this Silent Reflux. After some days of researching I decided to add digestive enzymes to my diet (in capsule form)… was almost an immediate fix. Since then haven’t had much of an issue…. I think I’m on the way to getting better. It seems the gut flora was out of whack after having such a bad sinus infection. Who knows… we’ll see how things go over the next few weeks.
Anyway, along the way I ran across an article promoting the benefits of beet juice. Yeah, you either love beets or hate ‘me. I love them…. pickled, plain, canned, jarred, sliced, diced, Whole, Harvest, juiced… doesn’t matter to me. So the article caught my attention. I have a friend who says beets taste like ‘dirt’… so he said I bought dirt juice.😂
I had no idea of the awesome benefits. So I bought a jar. Given the not so good side effects you COULD have if you decided to chug a whole jar everyday I decided to drink it medicinally – about 4oz per day…2 in the morn and 2 in the afternoon. Tastes great to me! Anxious to see of any benefits. The article said some of the benefits are:

…and other good things…these three alone were enough for me to add it to my diet.
